I've done that trip (on a motorcycle no less). It takes a very long time, and there isn't much to see. Trees, rocks, and the occasional moose.
Unless you want to self inflict personal heartache, I'd recommend air travel, or at least the ferry.

I don't know why, maybe it's the Halo talking, but Cariboo Highway sounds like a dangerous place, like Spartan Valley.
